Raspberry Poached Pears on Chocolate Tarts

Just in time for the holidays. Add some WOW to your dessert table in a healthy way and with very little effort.

Preparation Time: 20 minutes

Cook Time: 40 minutes

Total Time: 1 hour

Makes 4 tarts


Base Ingredients:

· 4 large dates, pitted

· 1 cup of almonds

· 1/3 cup cooca powder

· ½ cup gluten free oats

· 2 tbsp. coconut water

Base Method:

1. In a food processer blend all dry ingredients until they form a mealy texture

2. With processer running, add in coconut water a bit a time blending until thoroughly mixed. Only use enough to make the mixture slightly tacky

3. Push mixture into the base and sides of four tart pans.

4. Roll any remaining mixture into bliss ball toppers for your tarts

Pear Ingredients:

· 3 cups of frozen raspberries

· 4 Bartlett pears, cored from the bottom and peeled

Pear Method:

1. Place the frozen raspberries in a medium sized sauce pan over medium-high heat

2. Melt berries and bring to a boil mixing continuously to avoid sticking and burning

3. Decrease the temperature to medium and add in pears

4. Cover the pot and cook for 35-40 minutes, check pears every 5 minutes to recover with juice and move slightly to avoid sticking

5. When tender remove pears to a plate and spoon raspberries into the tart base

6. Arrange pears standing upright on your tart shells and decorate with mini bliss balls

7. Let stand for 2-3 minutes then serve
