Naan Bread Pesto Pizza

Have you ever opened the oven door and just known... this is going to be good? From the first whiff my olfactory sense said YES, and it was not disappointed. Not only do these Naan bread pesto pizzas look, taste and smell divine, they are super healthy too. I'm am constantly looking for ways to bring up my daily Omega-3 intake and this pizza is just loaded with it. The walnuts, the avocado, the flax, the kale, the edamame, they all have it. So without further ado, let's get to it.

Prep Time: 15 minutes

Cook Time: 25 minutes

Total Time: 40 minutes

Makes 3 Naan Pizzas


Pizza Ingredients:

· Three pieces of naan bread

· 1 ½ cups of pesto

· 4-5 large cremini mushrooms, sliced

· ¼ cup frozen pineapple

· ¼ cup frozen kale

· ½ cup frozen edamame beans

· Optional, 1 tsp balsamic oil, drizzle of hot sauce or onion sprouts

Pizza Method:

1. Heat oven to 375 degrees Fahrenheit

2. Place naan bread on a baking tray

3. Spread liberally with pesto (see recipe below), layer on mushrooms and pineapple

4. Bake for 10 minutes

5. Meanwhile, in a small pan steam kale and edamame for 3-4 minutes in a ¼ cup of water

6. Remove pizza and top with kale and edamame

7. Bake for 10-15 minutes or until the edamame begin to brown

8. Remove from the oven and let cool for 2-3 minutes before serving.

9. Optional: Drizzle with balsamic oil, hot sauce or add sprouts such as onion sprouts as desired

Pesto Ingredients:

· 1 1/2 cups of tightly packed fresh basil

· 1 avocado

· Juice of ½ lemon

· 2 cloves of garlic

· 1 1/2 Tbsp of nutritional yeast

· 1 tsp milled flax seed

· 1/4 cup of raw walnuts

· ¼ tsp onion powder

· ¼ tsp garlic powder

· Pinch of salt

Pesto Method:

1. Place all ingredients in a small blender cup or food processor, blend until smooth

2. I recommend a taste test at this point. If you like more garlic, salt or lemon add them in freely.
