Fluffy Chocolate Mousse


If I could only have one dessert, it would be this! Add to its deliciousness that it only takes 5 minutes to make and you don't have to wait for it to set in the fridge, and we have what I call a winning dessert


Preparation Time: 5 minutes

Cook Time: 0 minutes

Total Time: 15 minutes Makes enough for 2-3 hungry herbivores


Recipe:


Mousse Ingredients:

  • 1 can of full fat coconut milk, (which has been in the fridge overnight to separate the fat from the liquid), divided

  • 1 bar of dark chocolate (100 g), chopped

  • 1/4 tsp vanilla

  • 1 tsp agave or maple syrup


Mousse Method:

  1. In a small pan melt the chocolate over low heat

  2. Add the 1 tbsp of the coconut cream fat, (the fat is the solid not liquid), mix until melted in

  3. Add 1 tsp of the coconut liquid and mix well.

  4. Raise the heat to medium and move mixture to stop from burning until mixture thickens

  5. Add the vanilla and stir to combine

  6. Remove from heat and transfer to a cool mixing bowl. You want the mixture to return to close to room temperature. If you are short on time place the bowl in the fridge for a coupe of minutes.

  7. once the mixture has cooled down, add the remaining coconut fat to the mixing bowl. DO NOT add the remaining coconut liquid.

  8. Whip with an electric mixer or stand mixer until fluffy

  9. Add the syrup to taste and mix well to distribute.


The mousse should be fluffy and set right away. It will keep like this out of the fridge and harden slightly if added to the fridge.


Coconut Cream Ingredients:

  • 1 can of full fat coconut milk, (which has been in the fridge overnight to separate the fat from the liquid), divided

  • 1/4 tsp vanilla

  • 1/4 cup unrefined powdered sugar, sifted (optional)


Coconut Cream Method:

  1. Separate the coconut fat from the can and place in a mixing bowl

  2. Whip the coconut cream while adding in the vanilla until light.

  3. Add the sugar if preferred. Personally I like it less sweet so I don't add it. Mix well to combine

  4. Pipe or spoon on top of the mousse.

  5. Enjoy!
