Cucumber Dill Salad

It's fresh, it's crisp, it is easier than washing a head of lettuce ;) . In the hot hot heat of summer I bet I'm not alone in loving cool food. Well what is cooler than using the best of the season and enjoying your harvest in a way that wont have you overheating? This summer salad is a favourite in our house and is the perfect portion for two hungry herbivores to share as a side.

Total Time: 35 minutes -1 hour

Makes 2 medium side salads


Salad Ingredients:

  • 1 large cucumber

  • 3 Tbsp apple cider vinegar

  • 1 tsp agave syrup

  • 1 small clove of garlic, minced

  • 1/2 Shallot, thinly sliced

  • 1/8 tsp paprika

  • 1/4 tsp sea salt

  • 1/8 tsp black pepper

  • 1/4 tsp garlic powder

  • 1 pinch of fresh dill seeds

  • 1 pinch of turmeric

  • Garnish with more sea salt, (to taste), onion sprouts and shallot slices

Salad Method:

  1. Using the thinnest setting on your mandolin, finely slice the cucumber into long strips

  2. Place the strips in a medium bowl

  3. In a small clean bowl, mix together all remaining ingredients

  4. Pour the mixture over the cucumbers and stir to coat well

  5. Set the salad in the fridge to allow the flavours to mix for at least 30 minutes, remixing the dressing over the cucumber once or twice

  6. Garnish and serve with a smile
