Blueberry White Currant Nice Cream


Blueberry white currant vanilla dream stack, so good you'll devour it all before you can give sharing a second thought.

The key to a balancing the tartness of the currants is a very good quality vanilla. I used an organic Madagascar Vanilla Extract for this stack and it is so smooth you could drink it straight, although I wouldn't recommend it ;). Back to the simple nice cream deliciousness:

Preparation Time: 10 minutes

Cook Time: 0 minutes

Total Time: 10 minutes

Makes enough for 1 hungry herbivore

Recipe: Ingredients:

  • 4 frozen bananas

  • 1 cup of frozen blueberries, divided

  • 1 tsp Madagascar Vanilla

  • 1/4 cup frozen white currants

Method:

  1. In a small pan melt 1/2 the blueberries over med/low heat

  2. Blend the bananas in a high-speed blender until smooth.

  3. Add the white currants and vanilla to the blender and continue to blend until smooth

  4. Spoon 1/2 of the white currant banana mixture into a medium-sized cup.

  5. Top with the melted blueberries, mixing in slightly to get the ribbons of purple dipping down.

  6. Add the remaining still frozen blueberries to the blender and blend with the mixture already in the pitcher.

  7. Working quickly, pipe the blueberry nice cream on top

  8. Add some additional frozen currants and blueberries for decoration.
